Something is happening on the stoep of the old brewery outside Philippolis. The familiar craft beer and gin are still flowing, and the vivid sun still sets over the surrounding veld, but a new energy has entered the warmly rustic haunt: the unmistakable energy The Skinny Chef.  

Run by local restaurateur Tyrone ter Bruggen, The Skinny Chef has breathed fresh life into the premises formerly occupied by Waterkloof Brewery. While the much-loved Karoo Ale craft beers and gins continue to be an important part of the experience, the addition of a full restaurant menu and Tyrone's distinctive hospitality have transformed the venue into a destination in its own right.

Originally from the mist-covered village of Kaapsehoop in Mpumalanga, Tyrone first arrived in Philippolis in 2018. The annual Saddlebred Horse Show was underway and South Africa was preparing for what would become a memorable Rugby World Cup victory. What was meant to be a short stay soon became something more.

During ten days in town, he found himself drawn to the people. Coming from a small town in Mpumalanga, he understood the dynamics of close-knit communities, but Philippolis was different.

"The locals were welcoming, warm and had typical platteland heart," he says. "I knew in a short time that this is where I needed to be for the next season of my life." He returned just four months later with two dogs and a trailer full of possessions, ready to enter this new Karoo season.

Tyrone has built a reputation over the years through several successful hospitality ventures in town. Along the way he has learned that hospitality is ultimately about people.

"It doesn't matter where in the world you are," he explains. "Hospitality is a people-based business." His success has largely come from consistency – in service and food quality as well as in creating genuine relationships with both locals and visitors. It's a philosophy that seems to be working.

The Skinny Chef has become a lively social hub where travellers, locals, farmers and weekend visitors gather around good food and lively conversation. Tyrone describes the restaurant as a place that reflects the Karoo itself.

"We present ourselves, the setting and dishes in a way unique to the Karoo," he says. "Offering something tasteful, clean and wholesome, not only to those looking for a unique dining experience, but a place for people to come together with great music, lots of laughs and unforgettable memories."

The brewery's celebrated craft beer and gin are firmly woven into the experience. "People are now able to not only enjoy a craft brew on one of the three stoeps but at the same time have a hearty meal or light snack."

Food is where The Skinny Chef truly leaves its mark. The menu reflects Tyrone's appreciation for hearty Karoo flavours and generous hospitality. Guests can choose from a variety of wraps filled with local ingredients, homemade gourmet burgers and an array of lamb dishes including lamb ribs and chops. One particular favourite has already developed something of a following among regular patrons: sirloin steak topped with creamy garlic snails.

Each dish is served with hand-cut potato wedges and seasonal vegetables, while daily and weekly specials mean that there is always something new to discover.

For Tyrone, a great Karoo dining experience reflects local flavours and brews paired with good stories, and background music mingled with the sound of laughter. Maybe a crackling fireplace on a winter evening or sundowners enjoyed on the stoep while overlooking the sunlit veld and nearby windmills.

The restaurant's popularity has been fuelled by both passing travellers as well as the support of the Philippolis community. Many residents travel considerable distances from surrounding farms to spend time in town. Tyrone believes establishments like The Skinny Chef have a responsibility to create experiences that make those journeys worthwhile. His appreciation for the local community runs deep. "Every day I am blown away by the generosity that this community portrays," he says. "For that we are forever grateful."

Looking ahead, Tyrone has no shortage of plans. Wine tastings, live performances, local talent showcases and appearances by bigger names are all possibilities. There are also larger transformation projects waiting in the wings, developments he prefers visitors to discover for themselves.

For now, though, his goal is simple: offer visitors a memorable platteland experience filled with good food and genuine hospitality. "My wish is that when people leave, the only negative part of their experience would be that there was too much food on their plate," he laughs.

With full bellies, perhaps one glass of wine too many and stories to tell long after the journey home, this seems to be a wish The Skinny Chef is already fulfilling.
